This is a cookie I like to make when company comes.
Everyone loves these cookies, but my Aunt and Mom really love them!
Since my Mom was talking about how I made the Best Peanut Butter Cookies the other day and there is no travel any time soon, I decided to bake these and send them overnight.
I’m sure they will be pleasantly surprised.
Little Dolli is always ready to help!
Here is the yummy finished cookie!
Have you ever made Peanut Butter Cookies?
It is super simple and fast.
Simple and fast is what I like!
You can use a mixer if you have one. If not, just use a whisk and a mixing spoon.
They will turn out great either way.
Double this recipe if you want to have plenty to share.
It is important to make sure your butter is room temperature.
Mine was still a little too cold so I threw it in the microwave for a few seconds.
Another tip I have for you is to use parchment paper to line your baking sheets. It took me years to figure that out.
You don’t have to, but I always measure out the ingredients and put them in bowls. Then when I start mixing I can just throw everything in.
Start by creaming the butter, peanut butter, sugars, egg, and vanilla. Either with a whisk or in the stand mixer. Stir the dry ingredients together in a separate bowl.
Then mix into the creamed mixture.
Drop cookie dough onto cookie sheets using two spoons.
Roll the dough into balls. Place a few inches away on either a greased or parchment paper lined cookie sheet.
Then, dip a fork in some water or flour and criss cross the cookies and push down gently.
I think I probably make them too big. The recipe says one inch balls. I’m pretty sure mine are more than an inch.
That’s ok right?
Bake them at 375 degrees for 10-12 minutes depending on your oven. Check after 10 minutes.
It’s better to under bake a bit than over bake.
Bake just until golden brown on the edges.
Let them cool a bit then transfer to cooling rack or paper towels to cool all the way.
They will come out a little crisp on the edge and soft and chewy in the center.
Getting so excited to eat one or two or……
These really are the best peanut butter cookies!
The recipe says this makes 4 dozen if you use the original amounts.
Mine made 5 1/2 dozen from the doubled recipe.
This plate has the first dozen minus one. 😉
The only bad part of making these cookies is the clean up.
I’d say It’s worth it though!

Now let’s get some of these ready to send by overnight mail.
- Make sure the cookies are cool
- I put them in the fridge just to make sure
- Place bubble wrap in the bottom of the box
- Put the cookies in a clear bag
- Add a little tag with a note on top
- Put more bubble wrap on top
- Wrap with pretty tissue paper
- Tie with a ribbon
Tada!
Address the box and get them to the post office.
Now try not to eat too many.
These freeze very well.
Pull them out of the freezer one at a time and let sit for just a few minutes and they taste just as good as the day you baked them.
You may heat them in the microwave a few seconds if you like them warm. I prefer them room temperature or cold.
Let me know if you try these and if you think they are the best peanut butter cookies.
